Fried Eggs with Zucchini and Paprika
Fried eggs with zucchini and paprika are easy to make meals suitable as daily snacks, full meal, or even dinner.
Eggs are rich in fats, too, but if you use organic or omega-3 eggs, then those fats are healthy fats.

If you want to reduce the amount of fats in this meal, use egg whites instead of whole eggs.
As said before, three (larger) eggs have almost 20g of fats, but also 3 larger omega-3 eggs have at least 1g of omega-3 with plenty of other healthy fatty acids, vitamins, and minerals ... Peel of zucchini (some people just wash them) and cut into suitable sized slices. Paprika - make three rings, 1 cm high, and chop the rest of it. Add some salt. |

After frying vegetables on both sides for several minutes, add eggs - put them into the paprika's rings. This way, they will get the taste and aroma of paprika. Add some spices you like - pepper, more salt (but not much), etc.
Few notes: no matter how accurately you slice paprika's rings, some egg whites will always get under the ring's edges and out - it is OK since this is real-life cooking, not some TV cooking show :)
To increase protein content, I also added some cottage cheese - a great source of slow-digesting proteins and calcium. |

That is around 500kcal, mostly from fats and protein. Again, if you want to reduce fats and calories, use egg whites from 'ordinary' eggs.
Also, to increase fiber content, one can eat some salad with this meal, although there are already two vegetables present - for example, a tomato salad with vinegar and salt and no oil.
